

Blueberry Marshmallow Cake:
Pre-exam. Brought this for a dinner with Yujia & Jancis before exams. I had quite a lot of disasters with this cake. The marshmallow layer burnt (yup thanks to my lovely oven again) and I had to scoop out the whole layer. The marshmallow you see now in the picture were added in the end for experimental purposes.
Ingredients:
French Vanilla Cake Mix……………………..1 box (18 1/4 oz)
Blueberry Pie Filling………………………….1 can (21 oz)
Miniature Marshmallows………………………enough to cover the cake
The Process:
1. Preheat oven to 350°F.
2. Grease a 13x9x2 inch baking pan.
3. Prepare cake mix according to package directions.
4. Spread marshmallows in the bottom of the baking pan, pour cake mix over marshmallows, spoon blueberries evenly on top.
5. Bake 30 to 40 minutes or until an inserted toothpick comes out clean, cool before serving.
Post-exam. Christmas present for Jancis & Kelly. Another huge disaster, this is not what I pictured it to be like.
What’s in there:
Bottom: Basic shortbread crust
Top: Butterscotch, White Chocolate, lots of candy sprinkles (mint candy in the middle)
Post exam. Ube is Philippine purple sweet potato. I made this to bring to Montreal for my uncle’s family. Made a lot of modification to the original recipe. I found it a bit too sweet but everyone said it was the right amount of sweetness.
Ingredients:
9″ deep dish pie crust…………..1
Ube (purple yam)……………………1 cup [rehydrated from ube powder]
Coconut flakes……………………….1 cup [also toasted this beforehand]
Brown sugar……………………………1 1/4 cup
Vanilla……………………………………..1 teaspoon
Eggs…………………………………………2
Cream………………………………………3/4 cup [used 1 whole can of evaporated milk]
Coconut milk powder…………….75g [dissolved in evaporated milk]
The Process:
1. Dissolve sugar, ube powder & coconut milk powder in evaporated milk
2. Add eggs one at a time, mixing after each addition. Add vanilla and continue mixing until well combined. Stir in young coconut.
3. Pour mixture into pre-bake crust and bake for 375F for 20 minutes then bring down temperature to 350F and bake for 20 minutes more or until center has set.
4. Remove from oven and let cool.
