White Chocolate Blondies

Adapted from http://blogs.babble.com/family-kitchen/2011/01/13/chewy-white-chocolate-blondies/

This is not a pretty picture, it caramelized a lot.  It tastes very very good though, it’s not oversweet and with so much white chocolate added to it, every bite bursts out with white chocolate flavour.  I think I’ll give this recipe another try sometime.  The baking process grossed me out a lot, I don’t know what happened but the blondies were sitting in a puddle of oil (I guess it’s from the white chocolate itself, it looked like how a badly melted chocolate will end up like).  I poured out the oil after it was done, it was still too soft so I popped it back in the oven for another 20 minutes.

Ingredients:

White Chocolate Baking Bar………………………………………………8 ounces
White Chocolate Chips………………………………………………………1 cup
Unsalted butter, cut into small pieces……………………………….1/2 cup
Large eggs………………………………………………………………………….2
Granulated white sugar………………………………………………………1/3 cup
Vanilla extract…………………………………………………………………….1 tablespoon
Unbleached all-purpose flour……………………………………………1 1/4 cup
Salt……………………………………………………………………………………..3/4 teaspoon
Skor bits…………………..…………………………………………………………1/2 cup

Directions:

1.       Preheat the oven to 350ºF. Lightly spray a 9-inch square baking pan with baking spray.

2.       Place the white chocolate bar, 1 cup of chips and butter with a double boiler method.

3.       In a bowl of a stand mixer or in a large bowl with an electric mixer, beat the eggs on medium speed until they are frothy. Add the sugar slowly as you continue to beat. Add the vanilla and then the melted chocolate and butter mixture. Gently fold in the flour, salt, and the remaining 1/2 cup of skor bits until well combined. Spoon the mixture into the prepared pan and spread evenly.

4. Bake for about 25 minutes, or until a toothpick comes out clean. Let the brownies cool and then enjoy with a side of cold milk.

白巧克力抹茶蛋糕

在抹茶蛋糕的中層加了skor bits,不過好像都溶了。

外面的不是cream 或frosting, 是純白巧克力glazing。

小小的蛋糕。
