Mocha Chocolate Chip Banana Muffins

Very popular. Two housemates asked me for the recipe😆

Ingredients:

Butter………………………..….1 cup [Replace with 1 stick and 1 cup of heavy cream]
Granulated sugar…….……1 ¼ cup [Used 2/3 cup]
Egg………………………………..1
Ripe bananas…………………3
Instant espresso.………….4 tablespoon, dissolved in
Water……………….…………..1 tablespoon
Vanilla extract……..………..1 teaspoon
Unbleached flour….………2 ¼ cups
Salt………………………………..1/4 teaspoon
Baking powder………………1 teaspoon
Baking soda……………………1 teaspoon
Cinnamon………………………1 teaspoon
Dark chocolate chips………1 package (250g)

Settings:

  • 350F; 25 minutes
  • Yields 19 muffins

Whole Wheat Nutella Banana Gingerbread

First I underbaked the bread and so it broke apart, then the second time after I took it out from the oven and let it cool for a while, I flipped it again and this time the nutella was stuck to the bottom of the pan.  It ended up to be a mess😦 It’s a very tasty and not very sweet spice bread with a nice blend of banana flavour, I think I will keep this recipe (sans nutella!! And probably banana for pure gingerbread) for gingerbread making.

Makes 1 loaf, 8-10 slices.

Ingredients:

Whole wheat flour…………………….1 cup
All purpose flour………………………..1 cup
Baking powder……………………………1/2 tsp
Baking soda…………………………………1/2 tsp
Salt………………………………………………1/2 tsp
Ground ginger…………………………….1 tsp
Ground cinnamon……………………….1 tbsp
Ground allspice………………………..….1/2 tsp
Ground cloves………………………………1/2 tsp
Brown sugar………………………………….1/2 cup
Banana, mashed…………………………..1 cup (about 2 large)
Molasses……………………………………….1/2 cup
Buttermilk……………………………………..1/2 cup
Corn oil…………………………………………..4 tbsp
Vanilla…………………………………………….1 tsp
Nutella or any Hazelnut cream……….2 heaping tbsps

Directions:

Preheat oven to 350F. Lightly grease a 9×5-inch loaf pan.

In a large bowl, whisk together flours, baking powder, baking soda, salt and spices.

In a medium bowl, whisk together brown sugar, banana, molasses, buttermilk and vegetable oil. Pour into dry ingredients and stir until just combined. Pour half of the batter into prepared pan.  Place nutella on top of the batter and top it with the remaining batter.

Bake for about 45 minutes, until a toothpick inserted into the center of the loaf comes out clean.

Banana Peanut Butter Bread

Makes one loaf

Ingredients:

Butter, at room temperature………………..1/2 cup
Peanut butter………………………………………..1/2 cup
Brown sugar…………………………………………..2/3 cup
Egg…………………….……………………………………1 [out of eggs, sub with 150mL milk]
Vanilla extract…………………………………………1 teaspoon
Large ripe bananas, mashed……………………3
Unbleached all-purpose flour…………………2 cups
Cocoa powder…………………………………………1/3 cup
Baking powder…………………………………………1 ¼ teaspoon
Salt…………………………………………………………..1/4 teaspoon
Cinnamon………………………………………………..1/4 teaspoon
Milk………………………………………………………….1/2 cup

Directions:

Preheat oven to 350 degrees. Combine flour, baking powder, cocoa, cinnamon and salt in a bowl and set aside.

Cream butter and peanut butter in the bowl of an electric mixer. Add sugars and beat until fluffy, about 3 minutes. Add egg and vanilla, mixing until combined. Add bananas and mix. Add dry ingredients slowly, mixing until just combined. Stir in milk, adding more one tablespoon at a time if batter is not wet enough.

Spray a loaf pan with non-stick spray and pour in batter. Cover the top with course sugar for garnish. Bake for 50 minutes, or until knife inserted comes out clean.
