July 11′: 土豆絲炒加拿大鹹肉 (Peameal back bacon)

材料

  • 土豆絲 (Yukon Gold)
  • Peameal bacon
  • 蒜頭
  • 蔥花

調味料

  • Extra-virgin olive oil
  • 黑醋
  • 味啉
  • Cajun seasoning

July ’11: Blueberry peameal pizza

with chives and goat cheese stuffed crust

I wanted to use up the goat cheese that was about to expire in the fridge.  I was going to use basil but I couldn’t find any at No Frills so I bought chives instead.  Since there were so many recipes out there that pairs blueberry with goat cheese, I decided to give it a try on a pizza.  The final pizza rose beautifully from the fresh dough and was delicious 😆

Ingredients:

Crust:
Goat’s milk cheese…………….8 oz
Chives
Black pepper
Olive oil

Toppings:
Cherry tomatoes
Blueberry
Peameal bacon
Scallions (white part)
Skim mozzarella cheese

Directions:

  • In a small bowl, combine goat cheese and basil until mixed. Add a grind of black pepper.  Add some olive oil if mixture is hard to stir  Set aside or allow to sit in the fridge.
  • Lay the pizza dough on a lightly floured surface and roll very thin. Along the outer edge (about 1 1/2 inches from the outside) place goat cheese around the entire outside. Fold dough over top and press down to seal the top to the bottom.

  1. Preheat the oven to 500 F.
  2. Lightly paint the pizza crust with olive oil, then layer the julienned peameal bacon on it. Sprinkle the scallion over the peameal bacon, then add the cherry tomatoes and blueberries, evenly distributed. Top with skim mozzarella. Bake for about 15 minutes, until the crust is done and cheese begins to brown.

July ’11: Wing Steak & Strawberry Spinach salad

Wing steak was over 50% off for Canada Day weekend :grin:(regular 11.49/lb).  Also it’s strawberry season now 😉

On the other hand, I decided I will not buy meat cuts from Food Basics again.  The meat quality is far from great.

July ’11: Strawberry shortcake, low-fat

I used a sponge cake to substitute for the shortcake, and used strawberry yoghurt to substitute for the whipped cream 😀

For the vanilla sponge:

Eggs…………………….3
Sugar…………………..1/2 cup
All purpose flour……1/2 cup
Vanilla…………………1 teaspoon

Method:

  1. Pre-heat the oven to 350F/ 180C.Prepare an 8″ round cake tin.
  2. Beat together the sugar,vanilla and eggs on high speed for 12 mins. Now, they would have tripled in volume.
  3. Fold in the flour and pour into a prepared tin.
  4. Bake for 30 mins or till done.
  5. Cool in tin for 10 mins, turn it onto a cooling rack and cool completely. Cut into 2, horizontally, when cooled.
