August ’11: 羊肩肉辣炒年糕

材料:

  • 羊肩肉
  • 火鍋年糕
  • 茄子
  • 味琳、料酒、老抽、葱、薑、蒜、辣椒、孜然、花椒大料

做法:

  1. 將羊肩肉洗淨,鍋內冷水燒開放入洗淨的羊肩肉,加入一小勺醋去腥;將羊肩肉撈出,瀝乾待用;
  2. 淨鍋內放入適量的油,涼油下入碎冰糖,用小火將其炒至融化,翻泡。
  3. 下入羊肩肉,翻炒上色,後加入兩小勺料酒,一小勺老抽炒勻;
  4. 放入蒜瓣、蔥段、薑片、陳皮、乾辣椒後,倒適量的熱水(高出羊排約3、4厘米),大火燒開;
  5. 倒入高壓鍋,放入適量的鹽,轉小火,蓋上鍋蓋,煮20分鐘至羊肉酥爛。
  6. 加入溫水泡好的火鍋年糕,燉3分鐘,湯汁收乾時即可出鍋。
